Manual oil and grease separator is designed to segregate floating oil, fats and grease from water from the kitchen wastewater stream. Oil and grease separator is designed to be fitted under the sink for oil water separation or an open type with flow by gravity. Manual oil and grease separator has low height, designed to be placed under the sink or is an open type.

- Drain valve under the system is manually operated and will let out accumulated sludge as required
- Oil content in the output water will be less than the permissible limit
- Oily water further enters the next chamber and flows up through the Claire Fontaine Synthesizer pack in which the particles stick to it
- In the Claire Fontaine Synthesizer pack, oil grows in to bigger droplets that migrate to the tank top and are continuously evacuated out by the manual oil evacuation unit
- Before oil is evacuated, heater is switched on to ensure that oil liquefies
- Oil free water, then moves to the last chamber and exits the system
- Due to the baffles in the system, at low flows, oil will remain within the baffle walls and will not flow outside
