Protein Enriched Maize Gluten is a yellow granular powder that is characteristically free from rancidity and the fermented odour. The Maize Gluten comprises of about 60-65% protein, 3-4% fat, 35% starch together with fibre and little mineral matter. The Maize Gluten is used in the poultry industry as a feed, since it is a rich source of proteins, amino acids, fat and minerals. The Protein Enriched Maize Gluten consists of water soluble albumins, alkali soluble glutelins, the globulins that are soluble in dilute salt solutions and prolamines which are soluble in aqueous alcohol.
